Initially set the iTunes to 'manually manage' the content in your iPod. Next, in the iTunes Source pane next to your iPod, click the gray triangle icon. Now, here you will find the contents of your iPod. Simply drag the songs that you want to store in the iPod, to the iPod's source pane.
In order to remove the items from the iPod, highlight the item and then select the Delete option from the Edit menu.
